Cliff’s Red Beans and Rice 

** NOTE: I’ve only cooked this once so it may need some tweeking.**

 

1          tbsp           olive oil

2          strips          sliced bacon

1                            ham hock

1          lb               dried red beans, soaked & drained

2          cups           rice

2          stalks         celery, chopped

1          large          onion, chopped

3          cloves        garlic

1          medium     carrots, sliced

1                            bell pepper, chopped

3                            chicken bullion cubes

3                            bay leaves

½         tsp             file’ 

1          tsp             ground sage

½         tsp             white pepper

1                            tomato, diced (or more depending on servings)

1                            green onion sliced, per serving

2          qts             water

+ Add oil, celery, onions, garlic, carrots and bacon, sauté until tender.

+ Add water, beans, ham hock, bell pepper and spices

+ Bring to boil then simmer covered 1 hr

+ Add rice cover and simmer 20 min (more depending on type of rice)

+ Stir occasionally to prevent rice from sticking

+ Serve with parmesan cheese, tomato and green onion.
