Curry Lentil Soup

 

1       tbsp              canola oil

1       tbsp              butter

1       large             carrot, sliced      

1       medium        onion, chopped

1       large clove    garlic, chopped

1       tsp                cumin, ground

1       tsp                curry powder

1       tsp                turmeric powder

1/2    tsp                coriander, ground

6       cups              water

2       cubes            vegetarian or chicken bouillon

1       pound          lentils

+ sauté  onions,  garlic and carrots  in the oil and butter

+ add in the spices and sauté for 1 minute.

+ add water, bouillon cubes, and lentils.

+ cook until lentils are tender, about 1 hour.
