Quick Pickled Green Tomatoes

            This is a general recipe, you'll have to judge the amount of liquid

            needed based on the size and number of containers.

 

            . thickly slice tomatoes

            . put in a container

            . for each quart of container

                  . add one clove garlic

                  . 1 teaspoon pickling spice

            . bring water to a boil

            . for each quart of water

                  . 1/2 cup white vinegar

                  . 3 tablespoons kosher salt

            . pour liquid over the tomatoes

            . press down and place a weight on top of the tomatoes

              so that all of the tomatoes are under the brine.

            . leave them at room temperature.
